Ingredients:

2 Eggs
3/4 Cup OT&M Meyer Lemon Olive Oil
1 1/4 cup sugar
3/4 Cup Milk
1 Cup and 2 Tablespoon All Purpose Flour
1/4 Teaspoon baking powder
1/4 Teaspoon baking soda
Dash of Salt
Powder Sugar for dusting

Directions:

1. Put oven rack in middle position and preheat oven to 350. Spray bottom of 9 inch pan with olive oil.
2. In a large bowl, whisk eggs, milk and sugar.  In a separate bowl, stir flour, baking powder, baking soda, and salt.  Combine ingredients, adding olive oil to batter and stir until smooth.
3.  Pour into prepared pan and bake 50 minutes, or until tester inserted into the center of the cake comes clean.
4.  Let sit until cool.  Dust powdered sugar over top and serve. **For a pretty presentatation, we garnish with a lil’ bit of Mint pulled from our garden
